It is our way of saying thank you for trying to understand the wonders of sake. And in this regard we typically select a sake with a story, and this month’s story is macro brewery! There is such a drive towards small artesian sake breweries that sometimes people forget the big boys. Both have their strengths and weaknesses, but let’s not forget that all major breweries were once microbreweries! As such I have selected a brew from a very large kura in Kobe called Hakutsuru. If you ever have a chance do visit the Hakutsuru Museum - do so! It is brilliant and it is free.
